Raw Food Meal, Marinara over Zucchini Noodles

If you are interested in raw foods, or just a meal that does not heat up the kitchen in summer, this is a great meal. So easy. I made a zucchini noodle meal before by grating the zucchini (Or in the video using a peeler) But at a friend's house, she used the Spiralizer and it made things so much prettier!  It's $25 from Amazon. Easy to use by pressing the crank handle. Oh, there will be a leftover piece of zucchini, about the size of a silver dollar and 1/2 in thick.  You must buy straight zucchinis or other veggies to get this thing to work.

So first, I made the recipe  in her book (Raw Food Made Easy for 1 or 2 People) which is on the youtube video here of  Jennifer Cornbleet.  You'll need a food processor. It calls for dried tomatoes, fresh tomatoes, red bell pepper, garlic, basil & oregano. I only used 1 tablespoon of cold pressed olive oil. I did use less garlic than it called for, as a little raw garlic goes a long way! Next time, I will only use two grains of rice worth.  It would appear for a cup's worth of sauce she over seasons with oregano & basil but that was not the case for me. I used dried herbs and the zucchini alone is bland, thus a well seasoned sauce is needed. She explains this in the video.

The recipe in her book and video says you can make and serve immediately, but I made it the day before so the flavors could mingle better.  So at least make the sauce in the morning and let the flavors marry a good 8 hours. It's very pretty and looks and tastes as if simmered on the stove. Plus it's a plant-based meal suitable for vegan friends.

I continue with making my own carrot juice and green juice blends as well. Please watch Jennifer's video. She has some great ideas except when I make almond milk, I do not add dates.  Her almond milk recipe would be sickening sweet for me but I digress!
